- 2–3 tbsp sugar-free sweetener (monk fruit or stevia)
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- ¼ tsp cinnamon
- Optional: sugar-free whipped cream for topping
Instructions
- In a bowl, whisk together pumpkin purée, Greek yogurt, sweetener, pumpkin pie spice, cinnamon, and vanilla.
- Fold in the sugar-free whipped topping until light and fluffy.
- Spoon into small dessert glasses.
- Chill for at least 1 hour for best texture.
- Top with sugar-free whipped cream + a pinch of cinnamon before serving.

- ¼ cup melted coconut oil (or light olive oil)
- ⅓ cup monk fruit sweetener (or stevia/erythritol blend)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- ½ tsp baking soda
- ½ tsp baking powder
- Pinch of salt
- Optional toppings: chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with wrappers.
- In a bowl, mix together the dry ingredients: almond flour, sweetener, spices, baking soda, baking powder, and salt.
